I'm back with Chocolate Chip Cookie Dough Brownies

It's been awhile since I've had the time to blog, or maybe I've had the time just not the will to actually sit down and type out my thoughts and happenings in my life. Well, now I'm in the mood on this rainy, miserable day to spill my heart... sort of.

To catch up: school is finished [all A's and 1 B+], I'm in the middle of quitting my one job that I've had since High School [yeah I think it's time to!] - my last day will be on May 30th and I will be the happiest girl in the world. I've been working out, relaxing, and working at my other job at the daycare/preschool. My kiddies graduate on June 25th :[ yes it will be a sad day for me! Other than that I've just been hanging out and trying to enjoy the time off from school, even though my summer class takes 4 weeks out of my summer, it's all good! 



So quite recently I came across a recipe on the blog, Bake at 350.

Chocolate Chip Cookie Dough Brownies!

1 box original Betty Crocker Supreme brownie mix (with chocolate pouch)
1 pouch Betty Crocker Chocolate Chip Cookie Mix
12 oz. semisweet chocolate (I used Baker's SEMISWEET squares)
3/4 c. heavy cream
6 TBSP butter
1/2 tsp vanilla

Preheat oven to 350. Grease the bottom only of a 9 x 13" pan.

Prepare the brownie mix as directed. Pour into prepared pan. Set aside.

Prepare the cookie dough as directed.

Drop the cookie dough by rounded tablespoons onto the brownie batter and press down slightly.

Bake for 35-40 minutes, until a toothpick comes out almost clean. Cool completely on a wire rack.


For the ganache:

Chop the chocolate (or use chocolate chips). Heat the cream and butter just until it begins to simmer. Pour over the chopped chocolate. Let sit 5 minutes, then stir until smooth. Stir in the vanilla.



Pour the ganache over the cooled brownies, spread and let stand until the ganache has set. Cut and devour!


I even had some extra cookie dough to make a few cookies. 



Everyone seemed to love them. Hey, maybe I'm on to something here ;]

Budget Cuts








This is upsetting, not only for current teachers, but those who are going to school to become a teacher. Sure the teachers being laid off is a horrible thing, but what's even more despicable is the fact that these children are suffering! All over the United States, children are losing things like their music program, art classes, and even lunch programs. They're being forced into classes with 35 children, which is way too many for one teacher to handle and have control over. 


These children are our future. If we lay off teachers, we're only hurting ourselves in the long run. Children will have a worse education, and things will never get better. They won't be able to become scientists to come up with a cure for cancer, or business men, or even a teacher, because they don't have the right education to do so. 


So if not for yourselves, do it for your children, your neighbor's children, the children of our future. Help and say no to budget cuts, no matter what country, state, or zip code you live in. Thank you

As I lay here...

As I lay here in the cool spring night, I think to myself that everything is going to be alright. [I rhymed and I didn't even plan on that ;)] I was worried about the little things in life, things that mean nothing now. I get stressed out very easily, and worry about every little decision I make. It essentially wears me out and I then take it out on those around me. I am going to try better though, to make sure I don't take anything out on my loved ones. I'm pretty much always a happy person, aside from the occasional days of stress overload. 


The little things in life shouldn't make us stress, worry, or get angry at the obstacles that we face. Life would be boring if we didn't have these daily challenges to overcome. It wouldn't be fair if we didn't have to make choices that would affect our lives, and even those around them. Life is way too short to be angry, frustrated, or sad. We must enjoy every day to it's fullest. Although that is extremely cliche', it's true through and through. 


These blogs have inspired me that what's truly amazing about life are the small things. Whether it be the look in 'his' eyes, the laugh of your baby, or the compliment by your boss, these things keep us smiling... happy... living. The horrible things that happen to us, may seem horrible, and some may think they cannot make it, but we are given strength. We know we can make it over this hill, even if it takes us a bit longer. Our support system, acts as our stabilizers, they're the extra push we need up the hill, and although they're always there, sometimes we don't notice until we're faced with a huge hurdle. 



So as I go ahead with my college life, I'm content, happy actually. These small hurdles, like the change of major, was once seen as a huge hurdle in my eyes, but after talking about it with my advisor, as well as you bloggers, I've come to the conclusion, that everything will get better. The sun will part the clouds and make life as we know it visible. Everything happens for a reason; something I stand by wholeheartedly. This quote has helped guide me through life as we know it. 


Throughout my life, I've been through my share of struggles, especially this year, yet this has made me become who I am today. I now want to help children going through problems of their own. From divorce to devastations around the home, I want children to know that they can achieve all that they want to if they just hold their chin up to the sky and believe. First a teacher, then a social worker, and then a play therapist. All these jobs will help children believe in a brighter day. With this blog, I hope to enlighten you all with a realization that life is meant to be enjoyed with our loved ones, not worrying about the whys, what-ifs, and hows in life.

this is the start of something good

That was my day in just a few of the many pictures I took. Our seats were great, and although we didn't catch any fly balls [in left field], we watched our amazin' mets together :] I got a little sunburn, but it was totally worth it! This helped my frustration and my boyfriend made me smile.

Monday Maddness

It's been awhile since I've actually written anything that's worth reading on here. I'm not sure whether I want to dive into my personal feelings that have been going on in my head day after day, or whether I want to not go so personal. Lately, I've been reading other blogs to get ideas and see how deep these posts go into the lives of others. I guess it all depends on the person. 


Lately I've been having baby fever. I know, I know, I'm way too young and driven right now to have a baby, which is what my relatives all say, as well as my boyfriend. Yet, I can't help the maternal instincts from occurring; it's like my body is just pushing me to have a baby. Even my dreams are telling me! Last night I had a dream I was pregnant and I was due in January. I was freaking out, just like I would in reality. So why do I keep wishing I had a lil one? I couldn't even tell you the answer to that because I have no idea. It's an odd, unexplainable feeling. 


You'd think working with kids would sort of become a birth control to not want any for a long time, but it has made me want them more! Surprisingly! 


Other than my baby frustrations, I've also been extremely frustrated with school, major changes, and class registrations. I just feel as if there is no time for anything to get done between all this school work, work, traveling, trying to squeeze friends and family in there. Is this really all possible?! I'm going completely insane trying to get everything done. My head is about to explode! OH my goshhhh. 


Anyways I hope you all enjoy your week. I will be trying my hardest not to have a nervous breakdown! Eh these are the little things in life, right? :]

his good luck charm

GREAT NEWS ! I will be going to OPENING DAY AT CITI FIELD ! METS v. MARLINS! My boyfriend bought the tickets last night :D !


I'm so excited! I've never been to an opening day game so I cannot wait to see what it's all about. Baseball/Softball is by far my favorite sport, and the Mets are my favorite team! I love the smell of the stadium, the atmosphere filled with people rooting for the Mets, the crack of the bat, the apple coming up out of the hat when they score. This is seriously one of my favorite things about Spring/Summer. I cannot wait until Monday. 



This is from just one of the may games I've been to with my boyfriend. :] Out of all seven games we went to together last year, they won! So now I'm supposedly a good luck charm. However I am not a good luck charm when I go to watch my boy's football games. Hmph.
